Green Peas Soup
Eating healthily can feel like an exercise in military planning. The problem made worse when you have children's treats in the house and a packet of biscuits is never far away!
This simple lunch time recipe has ingredients that can be kept in the freezer and kitchen cupboard to be rustled up when you are hungry and haven't restocked the fridge. You can also make it in advance and freeze in a container.
Ingredients:
1 onion diced
1 clove of garlic finely chopped
1 mug of dried green split peas
1 mug of frozen green peas
1 stock cube
- Fry the onion and garlic in a splash of olive oil until soft.
- Add the dried green peas, stock cube and a pint of water.
- Boil for 15 minutes.
- Add the frozen peas and boil for a further 15 minutes.
- Blend and serve
Adding some fresh chopped mint from the garden is optional.
