Delicious ‘no sugar’ Digestives
I am a sucker for tea and digestives and have passed this habit on to my children. Whilst we haven’t given up our biscuits we have cleaned up our act by batch making our own with wholemeal flour, oats, butter and honey. They are really flavoursome with a moorish crumbly texture. Still a treat without the added processed sugar and palm oil of some brands! and the kids love them too (and the dog).

Ingredients: makes 12 biscuits

100g wholemeal flour

100g organic oats

1/2 teaspoon baking powder

100g unsalted butter chilled

75g honey

Tip the oats, baking powder and wholemeal flour into a blender and whizz until a course powder.

Cube the chilled butter and pulse in the blender until combined.

Tip into a bowl and stir in the honey, eventually working with your hands into a dough.

wrap the dough in cling film and leave in the fridge for an hour.

Dust your work surface and take out the dough for rolling.

Roll into an even circle and begin cutting your biscuit shapes, re-rolling when you run out of space.

Pop on a greased tray and bake in the oven 170 degree/190 degree fan/gas mark 5 for 12-14 minutes until they are brown.

Keep in an airtight container out of the kiddies reach for a week – share sparingly with the dog.
