Roasted Veg with Grains

On certain days of the week I should be in 10 places at once at dinner time. Children need collecting from one class or another, combined with work commitments that almost have me reaching for the wine bottle (not whilst driving that would just be irresponsible).

This roasted veg dish is simple to prep in advance and just needs 50 minutes in the oven (ample opportunity for the glass of wine). It is nutritious (5 of your 5 a day), filling and robust enough for dinner.

Peel and chop the following veg into medium pieces:

3 sweet potato

2 Leeks

2 Peppers

1 Aubergine (small)

1 Punnet of mushrooms

Place all of the veg in a large roasting pan except the mushrooms. Squash 2 garlic cloves with the flat edge of your knife and add those, season and cover with a good slug of olive oil. Sprinkle some smoked paprika over the top (if you like it) and mix together with a wooden spoon.

You can do this in the morning and cover for popping in the oven later.

Cook at 180 degrees for 40 minutes.

Remove and add your mushrooms and grains for a further 10 minutes.

I like the Merchant Gourmet packets & they are so simple. Just snip open and sprinkle!

This week we had Merchant Gourmet Grains, Red Rice and Quinoa but you can find versions of these packs in all the major supermarkets now.

Remove from the oven and serve with a simple leaf salad.
