Homemade Baked Beans On Toast

Baked beans on toast, the ultimate comfort food. I love this grown up version with garlic, onions and a mix of nutritious beans that keeps energy levels high as a tasty lunch.

Simple to make with minimal preparation (this recipe took me 15 minutes). If you have leftovers put them in a sealed container in the fridge and eat cold the next day with a salad or inside a wholemeal wrap. 


400g Mixed beans (can or cartons ready to eat)

1 garlic clove 

1 small onion chopped

3 large tomatoes

1 teaspoon of smoked paprika

Quick and easy instructions:

Gently fry the onion and garlic in a little olive oil.

Once softened add the beans and tomatoes (chopped). Keep stirring whilst you cook for a further 5 minutes.

Add 100ml of water and your smoked paprika.

Cover and cook for a further 5 minutes.

Serve on toasted bread with a sprinkling of parmesan and fresh thyme.
