Greenpeas, courgette and spinach soup

Simple, delicious and nutritious incorporating our Greenpeas plant protein with baby spinach and creamy courgettes. Its hearty and healthy, perfect for lunch with some wholemeal bread or in a flask for lunch on the go.


1 medium onion chopped.

1 large courgette diced

1 medium sized potato diced.

200g spinach.

2 tbsp. olive oil.

2 pints vegetable stock.

1 tbsp. greenpeas 

Its easy, its green & its seriously tasty:

  1. Heat the oil in the pan and gently fry the courgette ad onion until softened.
  2. Add the potato, spinach and stock.
  3. Bring to the boil and simmer for about 20 minutes.
  4. Blitz with a food processor when cooked and stir in the greenpeas when the soup  piping hot.
