Simple, delicious and nutritious incorporating our Greenpeas plant protein with baby spinach and creamy courgettes. Its hearty and healthy, perfect for lunch with some wholemeal bread or in a flask for lunch on the go.
1 medium onion chopped.
1 large courgette diced
1 medium sized potato diced.
2 tbsp. olive oil.
2 pints vegetable stock.
Its easy, its green & its seriously tasty:
- Heat the oil in the pan and gently fry the courgette ad onion until softened.
- Add the potato, spinach and stock.
- Bring to the boil and simmer for about 20 minutes.
- Blitz with a food processor when cooked and stir in the greenpeas when the soup piping hot.
