Everything in our Green Goodness smoothie comes from chlorophyll rich green leaves from our garden.
Radish, spinach, beetroot and mint leaves blended with an apple, 1/2 squeezed lemon and a thumb of peeled ginger.
Add a little water (ice if you fancy) and blend until smooth.
Remember not to discard those beetroot or radish tops when preparing your vegetables, particularly if they are young, fresh and succulent.
Beetroot leaves contain a good supply of protein, phosphorous and zinc. They are high in vitamin B6, magnesium, copper, potassium and manganese. The vitamin K in beet leaves helps prevent osteoporosis. The leaves also have a higher iron content than spinach. The vitamin A content supports immunity and stimulates white blood cell production.
Radish leaves are actually more nutritious than the roots. They have significantly higher amounts of vitamin C, K, A, iron and calcium. They also have a pretty impressive antioxidant profile.
Spinach is a real energy booster and improves the quality of the blood. This is mostly due to its iron content. It is also an excellent source of vitamin K, A, C and folate. Spinach is also a good source of magnesium, manganese and vitamin B2.
Lets not forget the mint which is a good source of vitamin A, C, calcium, iron, magnesium. Mint is an anti inflammatory and excellent for digestion.
